Ever since I came home from Morocco, I’ve been attempting to make Moroccan food like I recall from my travels. I brought home a tagine from Morocco and have made two tagine recipes that turned out well.

This cookbook by Paula Wolfert is my favorite because she seems to realize that U.S. cooks might not have access to all the lovely ingredients or to all the time effort that Moroccan cooks have.
